An introductory talk looking at the drying behaviour of droplets containing suspended solids, specifically focussing on continued moisture removal after shell formation. The talk will discuss the possible mechanisms for shell formation, the nature of the shells formed when droplets dry and the way in which shells grow once formed. Reference will be made to relevant literature throughout the talk, as well as models being developed within the CoMo group to describe such behaviour.
