Passion Cake

  • 200 g margarine, soft
  • 200 g soft brown sugar
  • 4 eggs, beaten
  • 200 g wholemeal self-raising flour
  • 1 teaspoon of baking powder
  • 300 g carrots, peeled and grated
  • zest of one lemon
  • juice of one lemon
  • 100 g walnuts, chopped

For the icing

  • 75 g cream cheese
  • 50 g icing sugar
  • zest of one orange
  • juice of one orange


Preheat the oven to 180 C/250 F/Gas Mark 4. Beat together the margarine, sugar, eggs, flour, baking powder, carrots, lemon rind and juice and walnuts. Put in a greased and lined 20 cm deep cake tin. Bake in the preheated oven for about 90 minutes until well risen and golden brown. Leave to cook, while you prepare the icing. Beat together the cream cheese and icing sugar and use just enough orange juice to achieve a creamy consistency. Cover the top of the cake with the icing and sprinkle the orange rind over it.
